Hi Friends~Happy Friday! So sorry I have been a busy bee lately and haven’t had a chance to blog. Summertime is supposed to be more laid back, but this summer has been crazy busy. I was able to attend our family reunion two weekends ago and wasn’t sure exactly what treat to take to the reunion. We were traveling so it needed to be something easy to transport, so I decided on a cookie and brownie tray. Who doesn’t like a delicious homemade cookie, right? I decided to make my favorite cookie recipe(this one!), a new fancy smancy recipe, and my favorite brownie recipe. They were all delicious, but I just adore this Coconut Oatmeal Cookie. Everyone has their favorite cookie, be it chocolate chip, white chocolate macadamia nut, oatmeal, peanut butter, or snickerdoodle. Well, this recipe is mine. It is simple, buttery, crunchy, chewy, coconutty, and super easy to make. I actually got the recipe years ago at a lake party for my husbands work. His boss is wonderful and invites all the supervisors down to their lakehouse every summer for a day of fun in the sun with their boat, jetskis, pool, lake and fabulous dinner. Everyone brings a dish or snacks to share and this is where I first tried my favorite cookie. My husbands co-worker Matt’s wife had made them and I was instantly smitten. On that next Monday at work I had my husband ask Matt for the recipe and he actually had a print out of the recipe in his pocket. You see apparently EVERYONE had been asking him for the recipe! No kidding! I was thrilled to get the wonderful recipe and have been making them ever since. My version of cookie NIRVANA!! 😉 Enjoy my friends!

Let’s get started…simple ingredients gathered!
I mix all ingredients together in my stand mixer, but you can mix in a large bowl as well.
I always use a cookie scoop and place on parchment paper or Silpat lined baking sheet.
About 9 minutes in the oven=perfection!
Lightly browned, crispy, & chewy perfection!!!
This one is calling my name…:)
- 1 cup flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 cup quick oats
- 1 cup sweetened coconut
- Mix together flour, salt, baking soda and powder. Set aside. In mixer cream together butter and sugars. Add egg and vanilla. Slowly add in flour mixture. Mix in oats and coconut. Using small cookie scoop(or heaping teaspoon) drop onto parchment lined baking sheet. Bake at 350 for 8-10 minutes.
- *Recipe can easily be doubled to make a larger batch.
