Hi Guys! I’m BACK!! I took a little summer break from blogging to just enjoy time with my family! I still kept cooking and baking for them of course, so now I have a bunch of yummy recipes to share. I love the summer bounty and I am lucky my in-laws always have a wonderful garden that we get the benefit of! YAY!! For this recipe I used fresh picked green bell peppers and they were incredible, but you can always find bell peppers at the grocery store and sometimes I use a mixture of green, yellow, orange, and red ones and it makes a beautiful presentation.
The recipe for the filling is my very favorite Meatloaf recipe. I got the recipe while I was in Ohio visiting my Aunt Kay and was looking through her Taste Of Home magazines. I found the recipe for Mini Cheddar Meat Loaves and cut out the recipe. That was about 18 years ago and I have never made another recipe for Meatloaf. YES, it is that good! I love that it has cheese and oatmeal in it, so different from other meatloaf recipes. The topping is sweet and tangy and just perfection to my palate. You can always just make the mini meatloaves and not use the peppers and they are wonderful as well. I hope you enjoy!!

- 1 egg
- 3/4 cup milk
- 1 cup shredded mild cheddar cheese
- 1/2 cup quick oats
- 1/2 cup diced onion
- 1 tsp salt
- 1 lb ground chuck
- 4 bell peppers
- 2/3 cup ketchup
- 1/2 cup brown sugar
- 1-1/2 tsp yellow mustard
- In a large bowl mix together egg and milk. Stir in cheese, oats, onion, and salt. Add ground chuck and mix well. Shape into 8 mini loaves or stuff in bell peppers. *If using peppers, slice peppers in half lengthwise and remove seeds and membranes. Scoop filling mounded into peppers.
- Combine ketchup, brown sugar, and mustard until incorporated and spoon over tops of meatloaves. Bake uncovered at 350 for 45-50 minutes. Enjoy!
