Hi Friends! Hope everyone is having a fabulous Thursday. If not, I have a recipe that is certain to brighten your day! It is actually a new recipe for Ooey Gooey Carmelitas. I am wondering where in the world these have been all of my life? It is rare that I try a recipe and think OH YES this is perfection and know I will be making these over and over again.
They do remind me a little of my Mom’s Caramel Brownies…just because of the filling with oozing caramel and chocolate chips. But, that’s for another blog day…you’re going to love those as well!
I would seriously run out to the store and get the ingredients and make these ASAP…they are that yummy!

First things first, grab your bag of caramel bits or unwrapped caramels and place in glass bowl with 1/2 cup heavy cream. Melt in 1 minute intervals until caramel is all melted and smooth. Set aside to cool.
Mix together the dough and pat half of mixture into 8×8 pan. You can either grease pan or use parchment paper to line pan. (I learned this technique from Martha Stewart using the clips to hold parchment in place!)
Bake for 10 minutes in 350 degree oven.
Let dough cool for 1 minute and then sprinkle on chocolate chips and nuts(if using!)
Pour caramel over the chocolate chips.
Crumble the remaining dough over the caramel and bake for 16-20 minutes.
Cooked until lightly browned around the edges.
Now for the hard part…cool for a couple hours before cutting. Try not to drool!
Cut into bars and try to eat only one(I dare you)!! 😉

- 3/4 cup butter, melted
- 1 cup brown sugar
- 1 cup flour
- 1 cup quick oats
- 1/8 tsp salt
- 1/2 tsp baking soda
- 1 tsp pure vanilla extract
- 11 oz bag caramel bits or unwrapped square caramels
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped pecans *optional
- 1/2 cup heavy cream
- Combine caramels and heavy cream in medium glass bowl. Place in microwave and heat in 1 minute intervals, until caramels are melted. Stir together with cream until smooth. Set aside.
- Preheat oven to 350 F. In mixing bowl add melted butter, brown sugar and vanilla and mix until fluffy. Add in flour, oats, baking soda, and salt until crumbly. Using your hands pat half of mixture into greased or parchment paper lined 8x8 pan and bake for 10 minutes at 350 F. Cool for 1 minute.
- Sprinkle chocolate chips and nuts over partially baked crust. Pour reserved caramel mixture over the top. Crumble the other half of dough over the top of caramel mixture. Bake for 16-20 minutes, until lightly browned around edges. Cool for 2 hours and cut into bars.
