Hi Guys…Welcome! I was trying to figure out which recipe I should make for my first blog post and I really wanted to share one of my Mom’s recipes. Mom was such a great cook and my love of cooking and baking stems from my childhood and wonderful homemade meals all wrapped up with love and memories. She passed away 2 years ago and now I carry on her wonderful recipes and memories cooking with my kids. This also happens to be one of my favorite desserts and one of my most requested recipes from friends. I was even asked to cater this from a past job for one of the department heads Birthday celebration! It is something a little different from your average cake or chocolate dessert(not that there is anything wrong with those!) I hope you enjoy it!

Ingredients gathered…
Rectangle pizza made in jelly roll pan!
A little slice of heaven!
You can make a flag fruit pizza also, perfect for 4th of July or Veterans Day!
- 2 cups flour
- 1 cup melted butter
- 1 cup orange juice
- 1/2 cup lemon juice
- 1/2 cup water
- 1 cup sugar
- 4 Tbsp corn starch
- 16 oz cream cheese-softened
- 1 cup sugar
- 2 Tbsp milk
- To make Crust: Mix melted butter and flour and pat into pizza pan/jelly roll pan. Bake at 350 F. for 12-15 minutes. Cool.
- To make Glaze: Wisk together sugar and cornstarch in medium saucepan. Add orange juice, lemon juice, and water and cook over medium heat until it comes to a boil and thickens, stirring constantly. Boil for 1 minute and set aside to cool.
- To make Filling: Mix together softened cream cheese, sugar and milk.
- For Fruit: Slice strawberries, kiwi, and bananas.
- Assemble Pizza: Spread cream cheese filling over crust and top with fruit. Spoon glaze over the top of fruit. Refrigerate for at least 2 hours to overnight before serving.
- *You can easily halve this recipe and bake in 9 inch pie pan for a smaller pizza. If you need a very large one, use a sheet pan and triple the recipe.
