Ingredients
- 1/2 cup butter-softened
- 1-1/2 cups sugar
- 1 cup sour cream
- 2 large eggs
- 1-3/4 cup mashed ripe bananas *about 3-4 bananas
- 1-1/2 tsp pure vanilla extract
- 2 cups flour
- 1 tsp baking soda
- 3/4 tsp salt
- 1/2 cup chopped walnuts or pecans *optional
Browned Butter Frosting:
- 1/2 cup butter
- 4 cups powdered sugar
- 1 tsp vanilla
- 3-4 Tbls milk or cream

For Banana Bars:
- Heat oven to 375 F. Grease or line with non-stick foil a 10x15 jellyroll pan. Mix together flour, baking soda, and salt and set aside. In mixer fitted with paddle attachment beat butter and sugar together until creamed. Next add sour cream and eggs and mix for 1 min. Add in mashed bananas and vanilla, just until incorporated. Mix in reserved dry ingredients in two batches, just until mixed together. Stir in walnuts or pecans if using. Pour batter into pan and bake for 20-25 minutes.
For Frosting:
- Melt butter in saucepan over medium heat until lightly browned(watch closely to not burn butter) stirring constantly. Butter will boil and foam and just start to turn brown. Remove and pour into mixing bowl. Add in powdered sugar and mix at medium speed to incorporate. Add in vanilla. Add in milk a tablespoon at a time to desired consistency. Frosting should be thicker than a glaze, but a little thinner than regular frosting. Spread on warm cake and cool. Enjoy!
